With the exception of the experimental solar powered cars, the Honda Insight at over 60 Hwy, 50 City is the best. Better than Prius. But some older Honda CRX-HF's (gas powered) would get 56 hwy. Had one in the late 80's, wish I still did.

I think the Honda Insight gets the best milage - around 60 mpg as already stated. It also looks like a mouse. Alot more models are using the hybrid engine to assist in horsepower, not fuel economy so many of the hybrid vehilces you hear about to still get only average fuel economy.

The Ford Escape is done differently. It's a gas engine with electric assist, which is a less fuel efficient design than an electric engine with gas assist. However, the Escape has significantly more power than the Prius.
As far as the best mileage, unmodified, probably the Honda Insight. The Prius is listed at 60 mpg, but realistically, it doesn't get that. The average real-world mpg for a Prius is around 45-50 mpg. An Insight, as I recall, has a real-world average around 60-62 mpg, maybe a bit lower. But it also only seats two, and has very little cargo room.
For saving gas, you also need to consider your lifestyle. If you have 2 kids, take them to school, go grocery shopping, etc., then an Insight may have higher gas mileage, but you'll be making multiple trips, so something with lower gas mileage but more room will do better. If you're single, only shop for yourself, don't carry people around regularly, etc., the Insight would be great for you. If you're planning on hauling anything regularly, you'll want to look for more power. The Prius, and probably the Insight, are not designed to tow anything. The Escape Hybrid is rated for 1000 lbs. The Lexus hybrid (luxury, so significantly more expensive) is rated for 3500 lbs. Consider all of your needs, don't just look at gas mileage.
By the way, I own and drive a Prius, and it's great.

The Toyota Prius, a hybrid, gets about 60 MPH. I just saw a commercial last night concerning a Ford hybrid (don't know the name, but it was a car, not a pick-up or SUV), that only gets 35 MPH. That's extremely low for a hybrid car.
